Concoction #1

Ever since starting my new wellness journey and changing my eating habits, I have relied mostly on information and recipes from others – thank goodness for the world wide web! (and my Mother lol) That all changed tonight.

I didn’t have any recipes planned out but I had some ground beef that needed used and some green beans — and there started my concoction 🙂  My hubs (Abe) has always called the meals I used to make concoctions – he’d come home and ask what’s for dinner – and if it wasn’t something like spaghetti or meatloaf – you know, something definite – then immediately it was a concoction. I used to take a little offense to that term – but not any more! I’m proud of my concoctions 😉

Ground Beef & Green Bean Casserole

Ingredients:
1lb  Organic Ground Beef
1  medium Yellow Onion, chopped (or substitute for 1 Tablespoon Onion Powder)
2  Garlic Cloves, minced
8oz  Tomato Sauce
1/2  Tablespoon dried Basil
1/4  Tablespoon dried Oregano
1/2  Teaspoon Red Pepper Flakes (to taste)
12oz  Green Beans, cut into bite size
1 medium  Sweet Potato, peeled and cut into bite size
Salt and Pepper, to taste
Parmesan Cheese (garnish)

  1. Preheat Oven to 350 F.
  2. Heat a large pan over medium-high heat and brown your ground beef.  (use an oven safe skillet to save on dishes)
  3. Season with salt and pepper.
  4. Reduce heat to medium, add onion, and cook until onion is softened.
  5. Add garlic and stir and let cook for another minute.
  6. Stir in tomato sauce, basil, oregano, red pepper flakes.
  7. Add green beans and sweet potato. Stir together.
  8. Transfer to baking dish – and bake for 40 minutes or until beans can be pierced with fork.
  9. Top with some freshly grated Parmesan cheese.
  10. Enjoy! 🙂
